Chocolate Hazelnut Torte Recipe:
1/2 cup (70 grams) hazelnuts
1/4 cup (30 grams) all purpose flour
1/4 teaspoon salt
4 large eggs
6 ounces (170 grams) semisweet or bittersweet chocolate, chopped
6 ounces (170 grams) unsalted butter, cut into pieces
3/4 cup (150 grams) granulated white sugar (divided)
1 teaspoon pure vanilla extract
1/4 teaspoon cream of tartar
Chocolate Ganache: (optional)
8 ounces (227 grams) bittersweet or semisweet chocolate, cut into pieces
3/4 cup (180 ml) heavy whipping cream
2 tablespoons (28 grams) unsalted butter
1 tablespoons cognac or brandy (optional)
Note: Cream of tartar is used when whipping eggs whites to help stabilize them, and to prevent them from drying out and being over beaten.
